Apple Cake Recipe

Last fall I tried making an apple cake from one of my favorite blogs (who shall remain nameless) but the result was less than extraordinary. It took forever to bake all the way through, the flavor wasn’t that great, and I honestly ended up throwing half of it away.

Then my mom tried a new recipe from one of her friends, and it became an instant classic! It’s super easy (literally mix the ingredients together and bake!), freezes well, and tastes great by itself, with ice cream, cold, or warmed up. I think I ate about seven pieces the last time we visited my parents… sometimes multiple pieces in one afternoon.

In short, it’s pretty perfect; and because I use this blog to keep track of all my recipes, of course I have to share it here!

Ingredients:

  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1-1/2 teaspoon cinnamon
  • 3 eggs, beaten
  • 1 cup oil
  • 4 cups peeled and diced apples (about 4-5 small apples)
  • 1/2 cup chopped pecans

Directions:

  1. Preheat the oven to 350 degrees and grease a 9×12 baking pan.
  2. Combine ingredients in a big bowl, then transfer to the pan.
  3. Bake for 50 minutes.

Ta da!

I’ve been eating an entire pan by myself for the past week… and since there are apples in it, it counts as a healthy snack (or breakfast or dessert), right?!
